Happy Birthday Switzerland! In 1291, Switzerland officially became a country existing then of only 3 small cantons (states) in the center of the country. So today, we celebrate with the Swiss and make some iconic Swiss dishes—many of which Dean and Chef Christopher Koetke learned while living outside of Genève. The demonstration class will feature not only some savory favorites, but will conclude with a decadent Engadine Torte.
