The history of cheese dates back thousands of years, is made throughout the world, and has an infinite number of variations. In France alone, it is said that there are enough varieties of cheese to have a different one each day of the year. In this lecture, tasting and demonstration class, Dean and Chef Chris Koetke will delve into the science of cheese making, explain the cheese making process, describe the basic families of cheeses, and make some basic cheese recipes. Along the way, participants will have plenty of samples as examples of some of the world’s great cheeses. Beverage pairings will be available for purchase. By the end of this lecture class, your understanding of the world of cheese will be richer and more comprehensive.
